We will stack our pulled pork sandwich up against any pulled pork sandwich in Daytona Beach, or anywhere for that matter. It starts with "Sweet" Phil's Sweet 'n Spicy Dry Rub and then slow cooks for 12 to 15 hours until it's melt-in-your-mouth tender. Then we pull it with our home-made, just-a-little-spicy, Carolina style barbecue sauce and serve it with southern style coleslaw. Don't you hate it when pulled pork is served on a hard bun so when you bite into it, everything squirts out the back? We do too, so for a "Mofro" twist we'll put that between two southern griddled "Ho Cakes" (and if you're a purist, we'll put the slaw right on the sandwich and save you the trouble!). Get this with a glass of "Sweet" Phil's Home-Brewed Sweet Tea, and you'd swear you were up the coast a ways in the Outer Banks!
We start with a mild, flakey filet, and lightly season it before grilling it to perfection and serving with a wonderfully spiced, roasted corn tartar sauce, with a cilantro citrus slaw.
Aside from properly seasoning and cooking the Steak or Chicken for a Steak Philly or a Chicken Philly, there are several other things that that makes a Philly sandwich great. One is the thickness of the meat, too thick and it overpowers the peppers and onions, too thin and the whole sandwich falls apart. Another thing is the ratio of Chicken or Steak to grilled onions and peppers, and melted provolone cheese, this is more art than science, but it's gotta be a nice mix. Finally, the bread. Not too hard or it ruins the whole experience.
Ah, the Hamburger, an American beach classic. We grew up eating sandy hamburgers and cheeseburgers cooked on a tiny little grill over the sand right here in Daytona Beach. And from that experience, we learned a few things. First off, you start with good ground beef. Maybe a little seasoning, grill it to perfection on a nice hot grill until it's not too soft and not too firm. If it's a cheeseburger, it's American singles all the way for a SandyBottom's Cheeseburger. Get the cheese on in time to melt all over the patty, but not so long it all melts off the patty and onto the grill. Serve it with a soft, lightly grilled bun (we're serious about our buns), iceberg lettuce, a tomato slice, and a pickle. Ketchup and Mustard on the side, The only thing we do different than dear old dad is we leave out the sand!
